I was asked at our TRX class this morning what I eat for lunch.  I tend to get in a habit of eating the same lunch for awhile — I don’t mind eating the same thing, takes the stress out of planning, keeps it simple and ingredients are on hand.

I strive to get in a ton of vegetables, quality protein and healthy fats.

Lately, I am loving this salad… And yes, it is huge.  And yes, I did eat it all.  My boys always ask me, “Are you really going to eat all that, Mom?”   YES!

Greens – Romaine, spring mix, argula, baby kale, spinach – whatever you like — I enjoy a nice mix of several for texture and taste.
Shredded Vegetables – For convenience, I have been buying already shredded carrots, red cabbage, broccoli slaw and a few other varieties
Other Vegetables – Your favorites!  I have mushrooms and cucumbers today.
Quality protein – I bought some local, organic, homemade tofu while in Ithaca.   Dried it well and diced it up!  Choose your favorite protein.
Berries – So fresh and in season right now!  I have blueberries.
Avocado – For your healthy fat!  I love 1/2 avocado a day!

This is my dressing of choice lately:
1/4 cup tahini — great plant-based source of calcium and so delicious
2 tsps. maple syrup or raw honey
dash of red pepper flakes
juice from one lemon
2 tbsp raw apple cider vinegar
pink Himalayan sea salt
1/8-1/4 cup water

And I will add to this as well — sometimes coconut aminos, Dijon mustard, lime juice, different seasonings…play with it
